Pumpkin Chocolate Chip Bread

Following my love of Fall mood and the return of Libby's Pumpkin to the grocery store shelves, (I bought 8 of the big cans!!) I wanted to make a pumpkin baked good. I decided to go with a pumpkin chocolate chip bread. I found a recipe that would make three loaves!! That was way too much bread for the two of us, so I halved the recipes and ended up with one large loaf. I also made some healthy changes to the recipe.

Pumpkin Chocolate Chip Bread
- 1 1/2 cups turbinado sugar
- 7.5 ounces pumpkin puree
- 1/4 cup olive oil
- 1/4 cup unsweetened applesauce
- 1/3 cup water
- 2 eggs
- 1 3/4 cup whole wheat flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 cup mini chocolate chips

First, mix sugar, pumpkin, oil, applesauce, water, and eggs until blended well. I just used a hand whisk, not my mixer, and it worked well for the entire recipe. Then blend in the dry ingredients; flour, baking soda, and spices. Then fold in the chocolate chips. Baked at 350 degrees for almost one hour- just slightly less. I baked it in my toaster oven and it worked well.

This was very simple to make and the batter tasted delicious. Yes, I taste batter with raw egg in it. It's good!

I've been trying to reinvent Clean Eating and Me. Just changing it up a little bit to make it more exciting. I've decided to post more recipes and try to be more detailed in how I prepare things.   1. I want to make this so badly! Perfect for this time of year!

    I personally like when you go beyond what you ate/what happened in your day and sort of examine it, if that makes sense. Struggles, lessons learned, etc.
